Chicken Quesadilla Dinner with SPUD Meal Plan

Since I tried SPUD’s roast beef dinner meal plan with success, I’ve been wanting to try another meal plan kit. SPUD.ca’s produce delivery service doesn’t just have produce – they also carry many other grocery products, including these great meal plan kits to make preparing meals as easy as possible.

The Quick Quesadilla Dinner looked like a good pick – here’s what it includes and what I did with it!

  • Organic Sour Cream – 250 mL
  • Organic Medium Raw Milk Cheddar Cheese – 325 g
  • Boneless, Skinless Chicken Breast Medium (2 breasts, grown without antibiotics or animal bi-products) ~450-600g
  • Brown Rice Tortillas – 6 x 56.6g
  • Organic Green Onions – 1 count
  • Local Red Peppers – 1 count

First, I chopped up the red pepper and green onion – about a medium sized dice.

Then I grated the cheese.

Then I took out the chicken breast and cut it into tenders.

I greased a casserole dish with coconut oil to put the chicken in. Then I made a seasoning mix with paprika, cumin, turmeric, oregano, salt, and pepper. (I didn’t measure amounts, I just put more paprika and cumin than the other spices.)

I sprinkled the seasoning mix onto the chicken, and then put it in the oven to broil for about 5 minutes on high heat, until the chicken was no longer pink.

I put coconut oil into my wok, and stir fried the pepper, green onion, and chicken.

I laid out parchment paper onto a baking sheet and put the stir-fry mix onto half a tortilla, sprinkled cheese on top, and then folded it in half. I baked them in the oven at 350F for 10 minutes.

And voila! I cut it with a pizza cutter and served with sour cream! Delicious! My husband loved it! I made one with just cheese for my picky eating daughter and it was a hit with her too.

Just a note – the rice tortillas are a bit more brittle than wheat tortillas, so when you fold them in half, they may tear a bit. The upside is that they turn out more crispy after baking, which my daughter really enjoyed.

I still had some stir fry mix of chicken, red pepper and green onion leftover, which I put in a container with some rice to bring for lunch the next day!
