Peanut Butter Granola Bars (no gluten, dairy, or sugar)

gluten-free, dairy-free granola bars
  • 5 cups gluten-free rolled oats (Bob's Red Mill or Only Oats)
  • ½ teaspoon baking soda
  • 4 tablespoon chocolate chips (I used Enjoy Life mini chips - dairy, soy, nut free)
  • ⅔ cup organic peanut butter
  • ½ cup raw honey or maple syrup (I used maple syrup)
  • 2 tablespoon non dairy milk (I used almond milk)
  • 1½ cups applesauce (I did a quick homemade one by peeling & coring 3 apples, then heating them on the stove covered with water until they were mushy)
  1. Preheat oven to 350F.
  2. Mix all dry ingredients in one bowl. Mix wet into another. Combine wet to dry.
  3. Line a pan with parchment paper and spread the mixture out. With this recipe (double the original) I was able to almost fully cover my largest baking sheet (from The Pampered Chef, measuring 15½" x 10").
  4. Bake for 20-25 minutes. (I did 23 minutes.)
  5. Let them cool before cutting - lift the parchment paper and use a pizza cutter to cut.
