Peanut Butter Granola Bars (no gluten, dairy, or sugar)

I tried this original recipe from My Whole Food Life‘s Peanut Butter Granola Bars, and loved them. Only problem was that they had banana in them and my husband hates bananas. He looked so disappointed when he realized he couldn’t eat them. So I decided to replace the banana with applesauce. I also doubled the recipe because the first time I made the ones with banana, I ate them up in about 4 days by myself.

This time around they lasted for almost 1 week, with both my husband and me eating them. 🙂

  • 5 cups gluten-free rolled oats (Bob’s Red Mill or Only Oats)
  • 1/2 teaspoon baking soda
  • 4 tablespoon chocolate chips (I used Enjoy Life mini chips – dairy, soy, nut free)
  • 2/3 cup organic peanut butter
  • 1/2 cup raw honey or maple syrup (I used maple syrup)
  • 2 tablespoon non dairy milk (I used almond milk)
  • 1 1/2 cups applesauce (I did a quick homemade one by peeling & coring 3 apples, then heating them on the stove covered with water until they were mushy)
  1. Preheat oven to 350F.
  2. Mix all dry ingredients in one bowl. Mix wet into another. Combine wet to dry.
  3. Line a pan with parchment paper and spread the mixture out. With this recipe (double the original) I was able to almost fully cover my largest baking sheet (from The Pampered Chef, measuring 15 1/2″ x 10″).
  4. Bake for 20-25 minutes. (I did 23 minutes.)
  5. Let them cool before cutting – lift the parchment paper and use a pizza cutter to cut.

My daughter loves these granola bars too, which is a huge win for me! I’ve started to make them on a weekly basis for breakfast and snacks for all of us. I store them in the fridge to keep them fresh.
