Strawberry Rhubarb Popsicles RECIPE
Summer is officially here! For me, that means strawberries and rhubarb are popping up in the garden. I love the combination of strawberry and rhubarb, like in the jam I tried last summer. This year I finally got some popsicle molds to try making some delicious cold treats for a hot summer day.
Strawberry Rhubarb Popsicles

Serves: approximately 3 cups (enough for 12 popsicles in my molds from IKEA)
a delicious and healthy cool treat for hot summer days
Ingredients
- 3 stalks of rhubarb
- ¼ cup coconut sugar
- ¾ cup water
- 1¼ cup strawberries
Instructions
- Chop the rhubarb into small enough pieces to put into a small saucepan. Add the coconut sugar and water and bring to a bowl. Simmer until soft, about 10-15 minutes.
- Once cooked rhubarb mixture is cool, put it into a blender or food processor. Add the strawberries and blend/process until smooth.
- Pour into popsicle molds! (If I have any extra, my daughter eats it as a smoothie!)
