Strawberry Rhubarb Popsicles
Summer is officially here! For me, that means strawberries and rhubarb are popping up in the garden. I love the combination of strawberry and rhubarb, like in the jam I tried last summer. This year I finally got some popsicle molds to try making some delicious cold treats for a hot summer day.
- 3 stalks of rhubarb
- 1/4 cup coconut sugar
- 3/4 cup water
- 1 1/4 cup strawberries
- Chop the rhubarb into small enough pieces to put into a small saucepan. Add the coconut sugar and water and bring to a bowl. Simmer until soft, about 10-15 minutes.
- Once cooked rhubarb mixture is cool, put it into a blender or food processor. Add the strawberries and blend/process until smooth.
- Pour into popsicle molds! (If I have any extra, my daughter eats it as a smoothie!)

hello it is very good dessert.
thank you!
These look great, and I’ve never tried anything made with rhubarb besides pie. I bet the tangy flavor is perfect for popsicles!
It really is! It’s a perfect pairing with strawberries too!
These look so delicious! Nothing says summer like popsicles!
Thank you! Totally agree with you!
