Easy fresh salads are a must in the summer when you don’t want to cook. I love avocados so I always have them around. And since I got my Instant Pot, I make batches of hard boiled eggs often. That makes this summer fresh avocado egg salad super easy to throw together in just a few minutes!
- Dice the hard boiled eggs, avocados, and cucumbers.
- Put together in a bowl.
- Cut the dill into small pieces and sprinkle on top of the mixture.
- Add the mayonnaise and spices and mix well with a spoon.
I use this salad as a topping on bagels, rice cakes, crackers, really anything! I served it to guests and they gobbled it up – a good sign I would say!
