Poke (pronounced “Po-Keh”) Bowls have become very popular lately, and for good reason! Did you know how easy it is to make a poke bowl? Fresh ingredients, easily customizable, healthy and quick to throw together. Also perfect for summer when you don’t feel like cooking!

I’ve created an infographic to make it easy for you to customize your own poke bowl, depending on what you have on hand. I love mixing things up and trying new combinations. However, I do typically keep a few things consistent as you can see in my infographic: avocado, seaweed and sauce are key for me!

I was really excited when SPUD.ca started carrying sustainable seafood, especially the marinated tuna poke cubes! It makes it SOOO easy to throw a poke bowl together. Plus, all summer long, SPUD.ca have organic avocados for 99 cents each! Steal of a deal! All the other ingredients are also available through SPUD.ca, like seaweed sheets, organic mayo, organic tamari, and organic white basmati rice. If you want your bowl to taste more like sushi, you can even mix in some rice vinegar with your rice.

Tip on hard-boiled eggs: if you have an Instant Pot, you will never make hard-boiled eggs any other way! All it takes is 1 cup of water, your eggs on a trivet inside the pot, high pressure for 5 minutes, quick release, and put your eggs in cold water. Super quick, and easiest peel eggs EVER!!!

(I am still getting to know my Instant Pot but it is quickly becoming the best kitchen appliance I have ever gotten. Seriously. Try my ham recipe and you’ll love it!)
