Decadent Grain Free Chocolate Cake RECIPE
For my daughter’s birthday this year, she requested a cake instead of cupcakes, as she wanted to have it decorated with a My Little Pony toy we had (That’s how I decorate cakes. I put toys on top of them. No fancy fondant here.). So I wondered if the delicious chocolate brownie cupcake recipe I made last year would work as a cake? I’m very happy to say that the answer is a resounding YES!
I doubled the original recipe and used a rectangular 9″ x 13″ which was pretty much perfect for it. I had lots of comments that that the cake was delicious, and people were surprised when they found out it was grain free! Kids and adults gobbled it up!
- Preheat the oven to 350F.
- Grease cake pan with coconut oil, butter, or ghee.
- Mix the wet ingredients together with a mixer or food processor.
- Add the dry ingredients (except chocolate chips) and mix again.
- Add the chocolate chips and stir into the batter.
- Pour batter into cake pan.
- Bake in the oven for approximately 45-50 minutes. (I used the old toothpick test to check when it was done.)
- Remove and let cool – then enjoy!
2 ½ cups almond flour
4 tbsp coconut flour
2 cans black beans (I used Eden Organic as they’re the only safe BPA-free cans I know of)
1 cup cocoa powder
2 tsp baking soda
1 tsp salt
⅔ cup applesauce
4 eggs
1 ⅓ cups maple syrup
½ cup coconut oil, butter, or ghee (I used butter)
1 cup milk (coconut or whole milk – I used whole milk)
1 cup chocolate chips (I used Enjoy Life mini chips)
I used the same basic buttercream icing recipe as with the chocolate brownie cupcakes as well. However I only iced about half the cake because the big toy decoration took up a lot of space, so if you want to ice the whole top of the cake, you’d probably want to double the original recipe.
All-in-all – birthday cake success! This is going to be my go-to recipe from now on!
